Apricot and Amaretti Ice-cream

340 gr high-quality apricot jam
2 tablespoons lemon juice
284 ml double cream
29 gr amaretti biscuits

Beat the jam with the lemon juice to slacken. Whip the cream and fold into jam. Fold in the amaretti crumbs, spoon into a freezer container and freeze.
